Josh Calloway's Carrington Corned Beef
Ingredients
- 1 Corned Silverside
- 6 Cloves
- 6 Peppercorns
- 1 Onion (skin on) halved
- 1 Carrot Skin On
- 2 Bay Leaves
- ¼ cup White Vinegar
- 2 Tablespoons brown sugar
- 2 Garlic Cloves
Method
- Place in a pot of boiling water. Reduce and simmer for 1.5 hours, changing water every 30 minutes.
- Once cooked, wrap in foil and rest for 15 minutes.
- Serve with white sauce, cabbage and mash potato.
